My name is Daneen and last spring I went to a new restaurant with a colleague where the menu was full of cooking terms I had never seen before, like braised, infused, reduction and glazed. Instead of pointing at something randomly and hoping for the best I decided to ask the waiter for help and said, "Excuse me, I am not familiar with some of these terms. Could you explain what the lamb reduction sauce is?" The waiter patiently explained that a reduction sauce is made by cooking liquid slowly until it becomes thick and concentrated with a strong flavour and that the lamb version had a slightly sweet and smoky taste. I ordered it and it was one of the best things I have eaten in a restaurant — a discovery I would have missed completely if I had been too shy to ask. Do not be embarrassed to ask questions in English because asking a clear polite question is far better than ordering something you do not like because you were too shy to speak.
