My name is Hamza.
I work as a chef in a small restaurant in Karachi.
Cooking is not just my job but my passion and my identity.
My love for cooking started when I was eight years old and I watched my mother make biryani for the first time.
The way she layered the rice and the meat and added saffron water on top seemed like magic to me.
By the age of twelve I could make a full desi meal on my own.
In my restaurant I make a special lamb karahi that my customers say they cannot find anywhere else in the city.
The secret is slow cooking and the right combination of fresh tomatoes, green chilies and dry spices.
I grind my own spices fresh every day.
I want to one day open my own restaurant and name it after my mother.
Good food is an act of love.
Every dish I make carries a little piece of my heart.

راز دھیمی آنچ اور تازہ ٹماٹر، ہری مرچ اور خشک مسالوں کا صحیح مرکب ہے۔
میں ہر روز اپنے مسالے تازہ پیستا ہوں۔
میں ایک دن اپنا ریستوران کھولنا چاہتا ہوں اور اسے اپنی ماں کے نام پر رکھنا چاہتا ہوں۔
اچھا کھانا محبت کا عمل ہے۔
جو بھی ڈش میں بناتا ہوں اس میں میرے دل کا ایک چھوٹا سا حصہ ہوتا ہے۔

जिस तरह से उन्होंने चावल और मांस को परत लगाया और ऊपर केसर का पानी डाला वह मुझे जादू जैसा लगा।
बारह साल की उम्र तک मैं खुद पूरा देसी खाना बना सकता था।
अपने रेस्तराँ में मैं एक खास लैम्ब कड़ाही बनाता हूँ जिसके बारे में मेरे ग्राहक कहते हैं कि उन्हें शहर में कहीं और नहीं मिलती।
राज़ धीमी आँच और ताज़े टमाटर, हरी मिर्च और सूखे मसालों का सही मिश्रण है।
मैं हर दिन अपने मसाले ताज़ा पीसता हूँ।
मैं एक दिन अपना रेस्तराँ खोलना चाहता हूँ और इसे अपनी माँ के नाम पर रखना चाहता हूँ।
अच्छा खाना प्यार का काम है।
जो भी डिश मैं बनाता हूँ उसमें मेरे दिल का एक छोटा सा हिस्सा होता है।
