My name is Asad. I am a truck driver who travels between cities. Eating on the road is a big part of my life. Dhaba food has a very special taste that you cannot find in city restaurants. The owner is an old man named Ghulam Rasool who makes the best saag I have ever eaten in my life. He cooks it over a wood fire for four hours and adds pure white butter on top. The saag is served with makki ki roti which is golden yellow and warm. On cold mornings after a night of driving this meal feels like a hug from your mother. Another dhaba I love is near Sukkur where they make the best fish curry cooked in mustard oil. Eating at dhabas has connected me to ordinary working people from all parts of Pakistan. Everyone at a dhaba shares the same table and the same simple honest food. Dhabas are the true soul of Pakistani food culture.
میرا نام اسد ہے۔ میں ایک ٹرک ڈرائیور ہوں جو شہروں کے درمیان سفر کرتا ہے۔ سڑک پر کھانا میری زندگی کا ایک بڑا حصہ ہے۔ ڈھابے کے کھانے کا ایک بہت خاص ذائقہ ہوتا ہے جو آپ کو شہر کے ریستورانوں میں نہیں ملتا۔ مالک ایک بوڑھے آدمی ہیں جن کا نام غلام رسول ہے جو میری زندگی کا سب سے اچھا ساگ بناتے ہیں۔ وہ اسے چار گھنٹے لکڑی کی آگ پر پکاتے ہیں اور اوپر خالص سفید مکھن ڈالتے ہیں۔ ساگ مکی کی روٹی کے ساتھ پیش کیا جاتا ہے جو سنہری پیلی اور گرم ہوتی ہے۔ رات بھر گاڑی چلانے کے بعد ٹھنڈی صبحوں میں یہ کھانا آپ کی ماں کے گلے لگانے جیسا محسوس ہوتا ہے۔ ایک اور ڈھابہ جو مجھے پسند ہے سکھر کے قریب ہے جہاں وہ سرسوں کے تیل میں پکی سب سے اچھی مچھلی کری بناتے ہیں۔ ڈھابوں پر کھانے نے مجھے پاکستان کے تمام حصوں سے عام محنت کش لوگوں سے جوڑا ہے۔ ڈھابے پر ہر کوئی ایک ہی میز اور ایک ہی سادہ ایماندار کھانا شیئر کرتا ہے۔ ڈھابے پاکستانی کھانے کی ثقافت کی اصل روح ہیں۔
