My name is Akbar.
I am sixty years old and I want to talk about how Pakistani food has changed in the last forty years.
When I was young in the nineteen eighties eating out was something very rare and special.
Biryani was made at home for celebrations not ordered from an app.
Kebabs were grilled over real charcoal not a gas grill.
Lassi was made in earthen pots and tasted completely different from what you get in cartons today.
Today fast food chains have opened on every main road and young people eat burgers pizza and fried chicken regularly.
Traditional recipes are being forgotten because the younger generation does not learn them from their mothers and grandmothers.
However many young Pakistanis are now rediscovering traditional food and sharing old recipes on social media.
Good food culture never really dies.
It just needs people who care enough to keep it alive.
The taste of tradition is the most important gift one generation can pass to the next.
میرا نام اکبر ہے۔
میری عمر ساٹھ سال ہے اور میں اس بارے میں بات کرنا چاہتا ہوں کہ پچھلے چالیس سالوں میں پاکستانی کھانا کیسے بدل گیا ہے۔
جب میں اسی کی دہائی میں جوان تھا تو باہر کھانا بہت نادر اور خاص چیز تھی۔
بریانی جشن کے لیے گھر پر بنائی جاتی تھی نہ کہ کسی ایپ سے آرڈر کی جاتی تھی۔
کباب اصلی کوئلے پر بھونے جاتے تھے نہ کہ گیس گرل پر۔
لسی مٹی کے برتنوں میں بنائی جاتی تھی اور آج کل ڈبوں میں ملنے والی سے بالکل مختلف ذائقہ رکھتی تھی۔
آج ہر مرکزی سڑک پر فاسٹ فوڈ چینز ہیں اور نوجوان باقاعدگی سے برگر، پیزا اور فرائیڈ چکن کھاتے ہیں۔
روایتی ترکیبیں بھلائی جا رہی ہیں کیونکہ نئی نسل انہیں ماؤں اور دادیوں سے نہیں سیکھتی۔
تاہم بہت سے نوجوان پاکستانی روایتی کھانے کو دوبارہ دریافت کر رہے ہیں اور سوشل میڈیا پر پرانی ترکیبیں شیئر کر رہے ہیں۔
اچھی کھانے کی ثقافت واقعی کبھی نہیں مرتی۔
اسے صرف ایسے لوگوں کی ضرورت ہے جو اسے زندہ رکھنے کی پرواہ کریں۔
روایت کا ذائقہ سب سے اہم تحفہ ہے جو ایک نسل دوسری کو دے سکتی ہے۔

मेरी उम्र साठ साल है और पिछले चालीस सालों में पाकिस्तानी खाने की तब्दीली के बारे में बात करना चाहता हूँ।
अस्सी के दशक में जब जवान था तो बाहर खाना बहुत दुर्लभ था।
बिरयानी जश्न के लिए घर पर बनती थी किसी ऐप से नहीं।
कबाब असली कोयले पर भूने जाते थे गैस ग्रिल पर नहीं।
लस्सी मिट्टी के बर्तनों में बनती थी और डिब्बों की लस्सी से बिल्कुल अलग स्वाद था।
आज हर सड़क पर फास्ट फूड है और नौजवान नियमित बर्गर-पिज़्ज़ा खाते हैं।
पारंपरिक रेसिपी भुलाई जा रही हैं क्योंकि नई पीढ़ी माँओं से नहीं सीखती।
लेकिन कई नौजवान पाकिस्तानी पारंपरिक खाना दोबारा खोज रहे और सोशल मीडिया पर रेसिपी शेयर कर रहे हैं।
अच्छी खाने की संस्कृति वाकई कभी नहीं मरती।
इसे बस ऐसे लोगों की ज़रूरत है जो इसे जीवित रखने की परवाह करें।
परंपरा का स्वाद सबसे महत्वपूर्ण तोहफा है जो एक पीढ़ी दूसरी को दे सकती है।
