My name is Tariq. I want to tell you about the one food I ate as a child that I have been searching for ever since. There was an old woman in the village called Bibi Zulekha who made a sweet dish called shahi tukri. She used thick slices of day old bread fried golden in pure ghee. She soaked them in a syrup of sugar and cardamom and covered them in thick cream. She topped them with crushed pistachios and a single dried rose petal. The texture was crispy on the outside and soft inside. I have eaten shahi tukray many times since then but none have come close to what Bibi Zulekha made. She passed away when I was twelve and her recipe went with her. Every time I eat shahi tukray I close my eyes and try to remember that summer village taste. Food carries memory in a way that nothing else can. The taste of a dish can bring back a whole world that no longer exists.
میرا نام طارق ہے۔ میں آپ کو اس ایک کھانے کے بارے میں بتانا چاہتا ہوں جو میں نے بچپن میں کھایا اور جسے میں تب سے ڈھونڈ رہا ہوں۔ گاؤں میں بی بی زلیخا نامی ایک بوڑھی عورت تھی جو شاہی ٹکری نامی ایک میٹھا ڈش بناتی تھی۔ وہ پرانی روٹی کے موٹے ٹکڑوں کو خالص گھی میں سنہری تلتی تھی۔ وہ انہیں چینی اور الائچی کے شربت میں بھگوتی اور موٹی کریم سے ڈھانپتی تھی۔ وہ کچلے ہوئے پستے اور ایک سوکھی گلاب کی پتی سے اوپر سجاتی تھی۔ ساخت باہر سے کرسپی اور اندر سے نرم تھی۔ میں نے اس کے بعد سے کئی بار شاہی ٹکڑے کھائے ہیں لیکن کوئی بھی بی بی زلیخا کے بنائے کے قریب نہیں آیا۔ وہ اس وقت انتقال کر گئی جب میں بارہ سال کا تھا اور اس کی ترکیب اس کے ساتھ چلی گئی۔ جب بھی میں شاہی ٹکڑے کھاتا ہوں آنکھیں بند کرتا ہوں اور اس گرمی کے گاؤں کے ذائقے کو یاد کرنے کی کوشش کرتا ہوں۔ کھانا یادوں کو ایسے لے کر چلتا ہے جیسا کوئی اور چیز نہیں کر سکتی۔ ایک ڈش کا ذائقہ ایک پوری دنیا واپس لا سکتا ہے جو اب موجود نہیں ہے۔
